Tony and I have been doing lots of cooking together, which I’ve been absolutely loving. We’ve been trying to mix it up each week with something new and different and we’re rarely bored when it comes to dinner. I put together some of our favorite dinners we’ve been making that are great for meal prep, sharing with your family, or just date nights in like we’ve been having. Store fresh pesto in a sealed jar in the fridge for up to one week. (To prevent discolouration, pour a thin layer of olive oil over the surface before sealing the jar.) While the tomatoes are cooking, heat a pan over medium-high heat and brown the chops on both sides in the marinating oil. Remove the tomatoes from the oven. Add the chops and the steamed broccoli to the roasting dish. Pour over the pesto and stir through. Place the tomatoes in a roasting dish, season with salt and drizzle with the remaining olive oil. Roast in a preheated oven at 200 °C for 15minutes, or until the skins start to blister.
